Banana flour pancakes

Amaizin organic recipe Banana flour pancakes with blueberries and honey


Serves 4

  • 200 g Amaizin banana flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla essence
  • 600 ml buttermilk
  • 1 egg
  • oil
  • blueberries
  • banana
  • maple syrup or honey


Mix the banana flour with baking powder, salt, cinnamon and vanilla in a bowl. Add the buttermilk while stirring until you get a thick batter. Whisk in the egg. Add some more butermilk if the batter is too thick.

Put a frying pan on a medium heat and add a tablespoon of oil. When the pan is hot, pour in a bit of the batter. Bake about 3 or 4 pancakes in one go.

Little air bubbles will appear at the surface. Now turn the pancakes over and bake until golden brown.

Serve the pancakes with the blueberries, slices of banana and maple syrup or honey.
