Mexican Tortilla wraps
Gently sweat the onion in 2 tablespoons of olive oil. Add the black beans, the tomato concentrate and the fajita seasoning mix. Heat for approx.. 5 minutes and then mash with another 2 tablespoons of olive oil. Add salt and pepper to taste.
Prepare the wraps according to the instructions.
Fill the wraps with the bean mixture, add the feta cheese and a tablespoon of sour cream. Add tacosauce to taste.
Serve with guacamole.
