Pineapple coconut smoothie with lime and mint

INGREDIENTS

PREPARATION

Drain the pineapple pieces and collect the juice.

Put the pineapple pieces, half of the pineapple juice, coconut milk, the lime juice, and the mint leaves in a blender and blend until smooth. Add more of the pineapple juice if the smoothie stays to thick. Set asideĀ  for a while so the flavours can blend.

Stir the smoothie and serve in a glass garnished with a slice of lime.
