Pineapple coconut smoothie
Drain the pineapple pieces and collect the juice.
Put the pineapple pieces, half of the pineapple juice, coconut milk, the lime juice, and the mint leaves in a blender and blend until smooth. Add more of the pineapple juice if the smoothie stays to thick. Set aside for a while so the flavours can blend.
Stir the smoothie and serve in a glass garnished with a slice of lime.
