Pineapple coconut smoothie

PREPARATION

Drain the pineapple and collect the juice.

Put the pineapple pieces, half of the pineapple juice, lime juice, coconut milk and the mint leaves in a blender until smooth. Add more of the pineapple juice if the smoothie stays to thick.

Put in the fridge for at least an hour.

Stir the smoothie and serve garnished with a slice of lime.
