Banana flour cake with cashew nuts
For 1 cake
- 2 ripe bananas
- 2 eggs
- 75 grams Amaizin banana flour
- 50 ml (vegetable) milk
- 2 tbsp cashew nut paste
- 1 tsp cinnamon
- 1 tbsp sugar
- 1 tsp vanilla aroma
- a pinch of salt
- a handfull cashew nuts for garnish
Preheat the oven to 180 degrees.
Mix the bananas with the egg into a batter (use a hand mixer). Add the milk. Stir in 2 large tablespoons of the cashew nut paste.
Add the banana flour, cinnamon, salt and sugar and the vanilla and mix well. Taste whether the mixture is sweet enough, otherwise add some sugar.
Cover the pan with baking paper or grease the pan and put the batter in the pan. Cover with the cashew nuts.
Bake the cake for about 40 minutes. The cake is done when a skewer comes out dry and the top is golden brown.
Delicious with whipped cream!
