Taco shells with eggplant, black beans and goat cheese
Preheat the oven to 150 degrees.
Heat the oil in a frying pan. Bake the diced eggplant. Add the Amaizin fajita seasoning mix and stir in the tomato concentrate and 50 ml of water. Add the black beans and let this simmer. Season to taste with salt and pepper.
Meanwhile heat the taco shells for approx. 15 minutes.
Fill the taco shells with the beans and top off with some goats cheese and fresh coriander.
Serve with the taco sauce.
